if you read the recipe in the link, there's 8oz of cheeses to 1-lb of potatoes which seems a lot of cheese to that amount of potato.  Could also depend on the cheese used.  (If it is that).

It's what Delia Smith said it is on the link , it's one of those dishes that you need to try, to try to describe it tastes very good and is usually eaten with grilled sausage .Much better than plain mashed spud .Comes from the Massif Central area of France where the Cantal chesse is produced.It does end up very elastic as you can see from photos .

Thanks Kerch.   I do like mashed potato and cheese - I had some from M&S yesterday, and I occasionally make it myself.   Didn't know it was called that, though.

My mash and cheese which I love is just like mash with cheese in it that must be a very different sort of cheese to stretch that far but thanks for the info Kerch

The cantal is a hard  chesse same family as cheddar and is sold as a young cheese which is mild or a slighty older cheese which is a bit stronger and  as a mature cheese which I think is the best The only french cheese that 's made the same way as Cheddar.
