DVD discs

I have just finished using DVD-R discs 8x 4.7 gb 120minutes. I have just bought a new box but accidently picked up
1-16x, what is the difference please and is it alright to use them?

It should be OK to use them.
The 8x and 16x that you see is just the maximum speed that you can write to them but the software you use to burn the disc should sort that out for you.
